Teriyaki Ginger Wings

INGREDIENTS
3-4 pounds Chicken Wings
2 tablespoon avocado oil
1 Tablespoon Salt
​1 Teaspoon  black pepper
1 cup thick teriyaki sauce
2 teaspoon grated ginger
1 teaspoon crushed garlic
Sesame Seeds
 
DIRECTIONS
 
  1. Cut the drumettes from the flat part of the wing. Wash wings and pat dry with a paper towel. Place wings in a large bowl, add 2 tablespoons of avocado oil, 1 tablespoon salt, and 1 teaspoon black pepper.
  2. For Baking, Preheat the Oven to 450⁰F; For Air frying 370⁰F
  3. Arrange wings on a baking tray or arrange wings inside an air fryer.
  4. For Oven - Bake until the skin is crispy, about 45 minutes:  For an Air Fry, about 20 -25 minutes.
  5. In a large bowl, combine your teriyaki sauce, ginger, and garlic; mix well.
  6. Set aside ¼ cup of the sauce for dipping. (optional)
  7. If you have any dripping/oil from the baked wings, add to the sauce in the large bowl (about 1 tablespoon), transfer your baked wings to the sauce, and toss.
  8. Arrange your wings back onto the baking tray or air fryer. Bake 500⁰ F until the glaze is shiny and browned in spots about 3 minutes; Air Fryer 400⁰F for 3-5 minutes.
  9. Transfer wings to a platter and sprinkle sesame seeds. Serve with reserve sauce.

Vegetable Fried Rice

INGREDIENTS
2 cups cooked day-old rice
2 teaspoons sesame oil
¼ cup dark soy sauce
¼ cup chopped onions
¼ cup sliced fresh scallion
1 cup mixed vegetables
1 to 2 tablespoon oil

 DIRECTIONS
  1. Heat a nonstick skillet or wok on medium-high heat, add oil, add mixed vegetables and onion and cook until crisp-tender, 3-4 minutes.
  2. Reduce heat to medium, add rice and soy sauce and toss continuously until the rice is mixed well with the soy sauce for about 3-4 minutes.
  3. Add in scallion and sesame oil, stir. Remove from heat and serve

  
My dad taught me how to make fried rice, and it is one of my favorites dished to make with left-over rice or left-over noodles. His variation of this recipe includes adding a tablespoon or two of oyster sauce and scrambled eggs.
I like using frozen organic vegetables in my recipes and a dark soy sauce. My go-to soy sauce to use is Mushroom soy sauce. I like the darker color the soy sauce gives my rice, as well as the salty flavor.
Have fun with this recipe and add left-over meats, garlic, or a bit of Mirin to your fried rice!
