Jamaican Carrot Juice

Ingredients

  1 to 1 1/2 pound of organic carrots 
2 to 3 cups water if you are blending instead of juicing 
1 cup condensed milk (optional) or sugar to sweeten 
⅛ teaspoon nutmeg
1 teaspoon vanilla extract 
Directions 
  1. For Juicing 
    1. Wash and peel carrots, add carrots to a Juicer and juice all the carrots. Pour carrot juice in a pitcher then add 2 cups liquid (milk, non milk or water) then add the remaining ingredients 
  2. For Blending  
    1. Dice carrots, and blend with water until carrots are well blended.  Strain the blended carrots in a strainer or a cheese cloth to get call the juice out.
    2. Pour carrot juice into a pitcher and add the remaining ingredients. 
  3. Mix well and serve cold. 
Tips
  1. You can use milk,  oat milk, or almond milk instead of water if juicing the carrots.  
  2.  You can add 2 to 3 teaspoons of rum to your carrot juice if you like. 
  3. If you like it sweet, you can add some sugar.

Jamaican Codfish Fritter with Veggies(Stamp and Go)

Ingredients 
¼  to ½  pound salted codfish 
2 cups all-purpose flour
2 teaspoon sea salt
½ teaspoon black pepper
¼ teaspoon paprika (optional)
1 teaspoon thyme
1 hot pepper - scotch bonnet or habanero 
½ teaspoon garlic powder or 2 garlic cloves 
1  to 2 stalks of scallion
1 small onion 
1 plum tomato 
¼ cut diced zucchini 
2 -3 okra - optional 
About 2 to 2 ¼ cup room temperature water 
Oil for frying 
Directions
  1. Rinse codfish under cold water and place them in a pot with cold water. Bring to a boil, remove from heat, and rinse well with cold water. Drain the water, flake or shred the fish, and remove any fish bones. 
  2. Chop in small pieces of tomato, onion, garlic, scallion, zucchini, and pepper. 
  3. Combine flour, salt, garlic powder, black pepper, paprika, and thyme in a large mixing bowl. 
  4. Add the chopped ingredients to the flour bowl, then add the fish.
  5. Add about 1 ½ cups of water to the bowl them mix well. Slowly add the remaining water as needed to make a thick batter. 
  6. Heat avocado or canola oil in a large frying pan or skillet over medium-high heat. 
  7. Drop a spoonful of batter into the hot oil and fry until golden brown on both sides, about 2-3 minutes per side. 
  8. Drain on a paper towel and serve hot.
  9. Makes about 24
Tips
  1. This popular Jamaican Dish is usually served at breakfast or parties as an hors-d’oeuvre.
  2. Always taste your first batch and adjust your seasoning, if needed, before frying the remaining batter. 
  3. My favorite veggies that go well with this batter are yellow squash, raw or boiled okra, and bell peppers.
