Cooking with Dianne Morin 

Zucchini Cheddar Muffins

Ingredients
1 1/4 cup all purpose flour
¼ cup rolled oats
1 ½ teaspoon baking powder
1 tsp baking soda
½ teaspoon salt
¼ butter, melted
1 egg, lightly beaten
¾ cup milk
¼ sour cream
1 cup shredded unpeeled zucchini
1 clove garlic, minced
¾ cup shredded Cheddar Cheese
¼ cup grated Parmesan cheese
4 sliced bacon, crisply crooked and crumbled
Directions 
  1. Preheat oven to 350F. Spray 12 muffin cups with cooking spray or use a nonstick muffin pan.
  2. ​Mix flour, rolled oats, baking powder, baking soda, and salt in a bowl.
  3. In another bowl, stir together the butter, egg, milk, zucchini, sour cream and garlic until well blended. 
  4. Mix the flour mixture into the milk mixture, about a half cup at a time, stirring between additions, until the flour mixture is incorporated. Fold in the cheddar cheese, Parmesan cheese, and the crumbled bacon, and pour the batter into the prepared muffin cups. 
  5. Bake in the oven until a toothpick inserted into the center of the muffin comes out clean, about 30 to 35  minutes. Allow muffin to cool slightly before removing from pan; Serve warm.
