A Traditional Vietnamese Comfort Food Shared with Love. One of my favorite parts of traveling and spending time with family is learning recipes passed down through generations. Last Christmas, during a visit to my son Marcus and his girlfriend Van's home in Washington, I was introduced to one of Vietnam's most beloved comfort foods--Thịt Kho (Vietnamese Braised Pork and Eggs).
As someone who loves exploring cuisines from around the world, I was immediately drawn to the incredible aroma filling their home. The tender braised pork, rich caramel sauce, and perfectly seasoned eggs created a meal that was both simple and unforgettable. After my first bite, I understood why this dish has been a treasured family recipe in many Vietnamese households for generations. Van generously shared a traditional recipe with me, and I'm excited to share it with you. Watch carefully as the sugar changes from golden to a deep amber color. Immediately add the marinated pork and stir to coat every piece in the caramel. Be careful—the caramel will be extremely hot. Pork belly creates the richest, most traditional version of this dish, while pork shoulder is a leaner option that still becomes wonderfully tender after braising. Don't Rush the Braise. The magic happens during the slow simmer. Low-and-slow cooking develops the deep caramelized flavor that makes Thịt Kho so comforting. Don't Skip the Eggs: The eggs slowly absorb the rich braising sauce and become one of the most flavorful parts of the meal. Coconut Water Matters: Traditional Vietnamese recipes use coconut water—not coconut milk. Coconut water adds a delicate sweetness without making the sauce creamy. Make It Ahead: Like many braised dishes, Thịt Kho tastes even better the next day after the flavors have had time to meld together. Storage: Refrigerator: Store in an airtight container for up to 4 days. Freezer: Freeze for up to 3 months. For the best texture, freeze the pork separately from the eggs if possible.
