A versatile table bread

Roti is a simple, comforting flatbread that becomes wonderfully soft when rolled and cooked with patience.

What you'll need

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon oil
  • 1¼ cups warm water
  • Butter or oil, for brushing

Step by step

Instructions

  1. Mix flour and salt. Add oil and enough warm water to make a soft, smooth dough.
  2. Knead 5 minutes, cover, and rest at least 20 minutes.
  3. Divide into balls and roll each into a thin round on a lightly floured surface.
  4. Cook on a hot dry skillet until bubbles appear. Turn and cook the second side until it has brown spots.
  5. Brush lightly with butter or oil, wrap in a clean towel, and serve warm.

Dianne's kitchen tip

Rest the dough

The resting time relaxes the dough so it rolls out easily and stays tender.
