What you'll need
Ingredients
- 1 pound ground beef
- 1 pound ground pork
- 2 eggs, lightly beaten
- 1 cup fine dry breadcrumbs
- ¾ cup onion, finely chopped
- ½ cup celery, finely chopped
- ½ cup green bell pepper, finely chopped
- 2 garlic cloves, minced
- 4 tablespoons butter
- 1 tablespoon Tabasco sauce
- 1 tablespoon Worcestershire sauce
- ½ cup evaporated milk
- ½ cup ketchup
- 1 small can tomato paste
- Salt, cayenne, black pepper, white pepper, cumin, nutmeg, and 2 bay leaves
Step by step
Instructions
- Combine salt, cayenne, black pepper, white pepper, cumin, and nutmeg in a small bowl to make the seasoning blend.
- Melt butter in a saucepan over medium heat. Add onion, celery, bell pepper, green onion if using, garlic, Tabasco, Worcestershire, seasoning blend, and bay leaves. Sauté about 6 minutes.
- Stir in evaporated milk and ketchup. Cook 2 minutes, then remove from heat and cool completely. Remove bay leaves.
- Heat oven to 350°F. Place beef and pork in an ungreased 9-by-13-inch pan; add eggs, cooled vegetable mixture, and breadcrumbs. Mix thoroughly by hand.
- Shape into a loaf about 1½ inches high, 6 inches wide, and 12 inches long. Bake uncovered 25 minutes.
- Raise oven to 400°F, spread tomato paste over the loaf, and bake about 35 minutes more, until cooked through. Rest 5 minutes before slicing.

Dianne's kitchen tip
Cool the vegetables
Let the vegetable mixture cool before adding it to the meat so the loaf mixes evenly and safely.
